I think the best part about these pictures is because they were all from the same Halloween weekend of my junior in college. Charleston is NOTORIOUS for being craaaaazy for Halloween and my friends and I had so much fun being something totally new every night! tehe!

The past couple years I haven’t dressed up, only because I’ve either been working or had school. Somehow its all better when you are in college. 🙁 This year I’m having a blast though handing out candy to kiddies for the very first time. They all look so freakin’ adorable in their costumes! I can’t wait to have kids and dress them up and go trick or treating!!!!!!!!!!

But let me back up first and do a daily recap….. today has been soooooo tiring! Last night I went to bed around 9:30, thinking that I was so exhausted and all…….folks, I ended up laying in bed for 3 1/2 HOURS!!!!!!!!!! It was horrible. Just terrible. I kept looking over at the clock and getting really stressed out since I had to wake up at 5:30 for work. I don’t know what got into me…just a bad sleepless night. I called Ryan to say goodnight at 9:30 then called him again to say hi at 10:30 because I couldn’t fall asleep and then I called him AGAIN at midnight because I was still awake. He’s a trooper to put up with me :(. He’s like “why are you still awake???!!!” I felt like crying.
What do yall do in these kinds of situations? I have to admit, I’m horrible at them. Really. I get so anxious and stressed out because, above all else, I despise feeling exhausted at work. I try not to look at the clock, but then I do and just get more and more frustrated, which makes it even harder to fall asleep! So anyways, that has always been a struggle for me ever since I was a little girl. I DID end up falling asleep of course and the alarm went off (of course) at 5:30. Boy, was I ever dragging. And I still had my headache!

However, I made a WONDERFUL breakie bowl that pulled me together. I used 1 cup oikos, 1/2 cup quaker oatmeal squares, 1 banana, 1 spoonful peanut butter and some blackberry preserves:

I took two excedrin migraine pills and felt better within an hour of going to work. No coffee for me today because all those pills are are caffeine! I gulped down water like a mad woman (I felt SO dehydrated for some reason!) and sipped on Tazo Refresh herbal tea (a mint infusion).

For lunch, I packed a hummus & turkey sammie on protein bread with carrots, a pear and a granola bar.

I ate the kashi bar mid-morning and saved the carrots and the pear (probably the juiciest pear I’ve had in a long long long time!) to have with lunch.

After work, I had an appointment and errands to run (aka more candy to buy!) so I snacked on an apple pie larabar in the car.

I really didn’t want to run today. My eyes, my brain….everything is feeling the lack of sleep from last night. But…..I knew I should just do it. I would feel better afterwards and I didn’t exercise yesterday so I felt like I owed it to myself. So, originally I was going to run 4 miles but then when I was out there it ended up only being 3. I’m totally fine with that….whatever the distance, I’m just glad I went!!

After my run, ice and shower I started dinner! I’ve had a major craving for roasted root veggies lately and last time I was at the store I picked up a butternut squash, a sweet potato, parsnips and carrots—all my favies. I rough chopped them all, tossed in some peeled garlic cloves, sprinkled 0n some sea salt and drizzled evoo on the whole thing. I baked them at 400 for about 30 minutes, stirring occasionally.

The only problem was that I couldn’t figure out what protein source I wanted with them! I finally decided on a morningstar farms original grillers veggie burger covered in Sabra’s Spicy Hummus (I’m boring, I know). I threw on some kashi crackers for crunch and there ya have it!

Mmmmmmmmm roast veggies!!!! Parsnips are my favorite!!! =)

I’m such a sad case. Today Adam and I made caramel apples and I brought one home to have for dessert but when the time came to dig in, I DIDN’T WANT IT!!!!! Wahhh!!! I don’t know why! I did “sample” a lot of the caramel as I was dipping the apples today though. For dessert what I really really wanted was a mess made with a half cup of whipped cottage cheese, 1/2 cup H2H and a smidge of pb&j. I know, I know….I guess I just crave healthy things!

Today at work I made some delicious (I know, I tasted it) pecan scottie cookie batter:

It had coconut, pecans and oats in it! Yum, yum, yum!

I also made a ton of thick creamy frosting:

It was so light and fluffy I wanted to jump in!

On the healthier side, I sliced melons for a fruit plate:

They DO look good, don’t they? I think I might wrap mine up and save it for tomorrow night. I’m just so tired right now that all I want is my bed.

Oh! And I tried my first fresh fig at work today as well!

It was……..interesting! it had a very “meaty” texture to it. Definitely different than the fig newton filling, that’s for sure!

Tomorrow Adam and I are meeting at the club at 7 and then going and checking out this local farmer’s market down the street at 8. Tomorrow marks the first day that the main dining room (the formal one) at the club is open for dinner so we have a ton to do to get ready for it. Here in Vero we operate very seasonally. The snowbirds come in around this time, stay til April, then head back up north for the summer. Winter is our busiest season by far! Can you believe tomorrow is already November 1st???? Woah! Christmas is coming!!!!!!!!!

Phew. It’s taken me almost an hour to type this post because the doorbell keeps ringing! I’m off to alternate reading with answering the door! 🙂

    Hey Jenna, sorry to hear about the sleep troubles! when i get really stressed out/know that i’m going to be getting only a little sleep i tend to stay awake too:( however, if i imagine something monotonous with a lot of steps going through my mind (perhaps making an intricate cake start to finish?) while relaxing all of my muscles one at a time i tend to fall asleep faster. happy halloween chica!

    When I have that experience, I do relaxation exercises and close my eyes imagining myself at the beach— the sound of the waves, the ocean, the wind… It all relaxes me LOADS. And as a kiddie, I had the SAME deal. So no worries! OH and a warm muggy of almond milk/soymilk with cinnamon + stevia does WONDERS for me! Feel better doll 🙂

    What really help me when I can’t sleep is to not think. I know this might sound like the HARDEST thing to do, but bear with me. I all and any thought float into my head. I acknowledge their presence, but I do not let myself consider them/think about them. I just let one thought after another float in and out of my head without taking time to think and ponder them. I find that just letting my head think without actively ‘thinking’ really puts me to sleep. Hope this helps!

    that happens to me a lot, almost always when i have a lonnnng day coming up. to deal, i start at my feet, and repeat to myself ‘relax feet. go to sleep…just relax.’ then ‘legs, relax and go to sleep.’ sounds super corny, but it works sometimes 🙂
    just wanted to let ya know i started reading this abt a month ago, and i really love it! you seem damn awesome, as does your job. btw, those frosting shots nearly sent me into a frenzy!

    the answer to all your sleeping problems is medical school. just take up that little hobby and soon you too will be able to fall asleep in such awkward places as the hairdresser’s chair, during an eyebrow wax, standing up, and when sitting at a small table next to your physician professor who is leading a discussion with you and only 4 other people. those may or may be actual events that happened to me.
    just kidding.
    not really.
    but seriously, i was always someone who found it very very easy to fall asleep during savasana, i think because of how warm you are, the atmosphere the teacher cultivates, and the peacefulness/restfulness of your mind. probably also the incense. ive learned that trying to recreate this setting, sappy as it sounds, helps SO MUCH. so try to take some breaths and a few sighs and just stop your mind for a second. think of how you usually enter that state of rest and dont even say “oh i’ll try to get there” but just do that, you already got there, you’re there. this savasana business really really works for me. especially the incense. and most especially the med school haha. since youre a yogi maybe you’ll find it helps too 🙂

    Well Jenna….I can tell you 1 thing that does NOT work when trying to fall asleep….Reading New Food Blogs! The other night, I was WIDE awake and laying in bed for hours (stressful knowing I had to get up at 5:30) and decided to read some new blogs. MISTAKE. They were so interesting I wanted to keep reading! I was so tired the next day at work 🙁

    I too have trouble falling asleep especially when I know I have to wake up early for work the next day (its more common after I have a few days off which happened to me this week). But I really try to just not think. That tends to work after 30 minutes or so.

    When I can’t sleep, I get out of bed. Otherwise I just feel like poo. I try NOT to sleep. Reverse psychology.

    Sorry about your sleeplessness. Maybe you weren’t tired? Sometimes it’s better to get up for awhile longer. It seems wrong because you stress about getting up early, but if you do something relaxing and monotonous (knitting, reading German philosophers, writing poetry, for example) you end up going to sleep EARLIER than if you tossed and turned for hours in bed. I’ve also had success with Emily’s idea: go through the detailed steps of a monotonous task. Or visualize in excruciatingly montonous detail the steps of your next day. You’ll be asleep by the time you visualize finishing breakfast!

    Hey! I was wondering your thoughts on the ingredients in cottage cheese. I’ve been buying a couple different store brands just because they’re cheaper and I figured all cottage cheese is the same but when I read the ingredient list recently there was weird types of “gums” (words I couldn’t pronounce)! So then I picked up the Daisy brand and the ingredients are cultured skim milk, cream, salt, vitamin A, palmitate(a preservative, I’m pretty sure). I like this list a lot better but didn’t enjoy the texture and flavor as much. It’s eatable but I just wanted your input. Thanks!

    I can’t believe all of those costumes were from the Same Weekend!! Quite impressive 😉 I’ve been following your blog for quite a while and your balance and lifestyle (especially since starting culinary school!) are quite amazing. I’ve just started a blog of my own and wanted to make sure it was okay that I added you to my ‘blogroll’ (def. don’t feel obligated to reciprocate, though, mines still absurdly new and mostly experimental, haha).

    I’ve been having some trouble falling asleep lately too- hmm, something in the air? I heard that eating yogurt before bed helps but I do enough of that! Haha. Also, your recipes are Amazing and I Love roasted root veggies- you’re one of the only other people I know who likes parsnips! It should be a BSI and maybe more people would discover their amazingness.

    Hilarious… I just read your post out loud to my bf because I do the EXACT same thing to him when I have nights like that. I get all worked up and frustrated when I can’t sleep and feel like crying and need to share it with him.

    I’m a big fan of Friendship brand cc. I’ve never tried Daisy before! I usually don’t read the ingredients of the cc that I buy….I usually just buy it. I don’t eat massive amounts every day and I think its totally fine. There’s much worse stuff out there you could be eating!

    Hey Jenna,

    I’ve never posted before, but I’ve been reading the blog for a while now. I have migraines as well. I used to have them 3-4 times a week so I finally went to a neurologist while in college who gave me the headache diet as well as daily preventative migraine meds. Its not so much as a diet– but more like what foods commonly trigger migraines. When I saw peanut butter and chocolate (in bold by the way) on the list, I about died. My favorites! I had to eliminate them from my diet for awhile, but gradually I’ve introduced them back and I’m doing better. Stress and lack of sleep of course bring them on but I think I’m in tune with food better now that I can see it’s reactions to my pounding head! I’ve done a lot of research on migraines (hard to write a thesis while in bed hating light/sound/people who ask “hows the headache?”) so if you have any questions let me know!
