Horses and Cake

Dinner and family time was great, even though Big Brown losing definitely put a damper on everyone’s mood. We were all so pumped up about it and it came as such a shock. I guess that’s why there hasn’t been a triple crown winner in 30 years…pretty hard to do! I started watching pre-race stuff around 4:30 with my parents and we all had a cosmo that my mom had made. I also snacked on a few almonds that were on the table. The homemade cosmos came out pretty good! I’m not sure exactly how strong these were because normally, if I have more than one cosmo its enough to make me fall off my chair. I think my mom might have made my second one a virgin one ;). I’m just kidding, I don’t think she did that but they were quite tasty regardless. I also had a glass of red wine with dinner—hey, it was a celebration! Three drinks over a span of 4 hours isn’t so bad I don’t think.. not that I do it every night by any means though!

Dinner was awesome. My mom grilled salmon with a bbq and maple glaze and she also grilled pineapple, which made it even the more sweeter and delicious. We had sides of my favorite red cabbage dish, jasmine rice with pineapple and whole wheat rolls dipped in olive oil and red pepper flakes. Everything was so yummy. I miss my mom’s cooking!

Dessert was the best though, I have to say. On my request, my mom baked me the Coconut-Lemon Bundt Cake from Veganomicon. It was SO good. My dad ate two slices and claimed it was one of the best cakes he’s ever had. I can’t disagree. It really did come out perfect, especially when dusted with powdered sugar. Some pictures were taken of course and the second picture was an action shot taken of me blowing out my candles and is sort of blurry. Sorry about that!

After dinner my parents and I watched Borat and my dad drove me back to the apartment because I’m leaving my car at my parents house overnight because apparently tomorrow morning my brother is going to wash and wax my car for me for a birthday present. How sweet. Ryan is still fishing and Dexter and I are headed to bed!

ps—for my birthday I got a $100 gift card to WHOLE FOODS!!! The HUGE brand new store is opening up a couple miles away from my apartment on June 25th (yes, its marked in my calender). I’m ready to go now!!!!!!

    What a fabbbulous birthday celebration and that Cake looks WONDERFUL! Might you be able to snag the recipe for us? That would be lovely! And your new green top… So cute!     Because of certain copyright laws I can’t rewrite the cake recipe here :(. Its from the cookbook “Veganomicon” though, which I highly recommend! It could be my favorite cookbook of all time and that’s saying a lot…I highly recommend you check it out!

    PS-If you’re talking about the store on Turkey Lake (which I’m sure you are, haha), I’ve been wondering about when they were going to (FINALLY!) open! Now I have to go mark MY calendar! I drove by there Friday when I went shopping. Hopefully it will be a bigger, better WF than the one in Winter Park. I love the Wild Oats/WF in Tampa, though.

    I lol when you mentioned the powdered sugar on your forehead!

    On a different topic, I no longer have time to make oatmeal every morning. When you used to prepare it in advance would it take longer. What I mean is if it took 5 min. on the stove to cook one batch of oats, did you find it took 25 min for the oats to be on the stove when you cooked a whole week’s worth or still 5 min? Or maybe you found half the time. I am just trying to get an estimate.

    I realize you use steel cut (I am not sure how the timming differs on those), I used rolled oats, so I was just giving exmple time.

    One other quick question. You have inspired me to start using avocado on my sandwiches and I was wondering what type you buy. When I went to the grocery there are all diff. types and I had no idea what to get!

    Happy Birthday. I spend way too much money at Whole Foods. Love the sesame tofu they make. but I can’t walk out of there w/o spending less than $60. And I use a list. I’m working hard now to eat everything I have in my fridge and cabinets, all the beans and frozen foods too.
