Hurtin’ for Certain

Hello girls and boys (??) !

Wow, am I ever tired. Actually, there was a moment in spin class when I really didn’t know if I could make it! But I did and I’m glad I stayed and didn’t walk out (several people actually DID walk out!).

I think it has to do with the fact that this morning I was dreaming my alarm was going off and, therefore, would wake up every five minutes checking my clock to see if it was time to wake up yet. Grrr I HATE that! At one point I could have sworn I had missed my real alarm but then I looked at the clock and it was only 5:30 and I still had 20 more quality minutes of sleep.

Anyways, tonight at spin class I was sweating like crazy (and I am not even a big sweater!) and chugging water like crazy…..maybe I didn’t drink enough water today at work?? I was hurtin for certain and the music wasn’t loud enough, which made it hard for me to get into it. Needless to say, I was glad when 7 pm rolled around and I could get home to dinner, a shower and my BED! I threw together a super fast dinner that included a Gardenburger riblet and a heated up whole wheat pita.

Obviously its not the prettiest meal but it did the trick! Now that I think about it, I should have steamed up some broccoli or had some spinach or something because my mom always said “dinner should have something green in it” 🙂

I showered and made dessert, which totally made up for a lack of photogenic dinner (in my opinion!).

Mmmmmmmmm that would be my LAST chocolate vitamuffin with a spoonful of chocolate peanut butter 🙂 It was pretty darn amazing. And I’m sipping on sugar cookie tea with agave of course.

Tomorrow is the big day before. Ahhhhh it’s going to be i-n-s-a-n-e. Adam and I have to have EVERYTHING completely done by noon because after noon, the culinary team needs all of the ovens to start roasting the turkeys in.  I know I have it easy since Adam has been working from 7 am-10:30 pm the last few days to get it all done. My measly 8 hour shift seems like nothing! Haha. 😉

I’m off to pack, fold laundry, read and crash! Have a wonderful night and I’ll see you tomorrow!

    I have been looking EVERYWHERE for that sugar cookie tea…I don’t think Celestial Seasonings has shipped it to CA! So bummed.

    Thanks for the cake flour advice on my earlier comment. Do you ever make red velvet? It’s new to me (despite the many years I lived in the south) and smells pretty darn good…

    Red velvet cake with cream cheese frosting has always been my request for birthday cake every year! My mom found this recipe for one in Cooking Light years ago (you can just search for red velvet cake on their website, I’m sure) and makes it every year for me. Its outrageously amazing and has raspberries sandwiches between the cake layers. Mmm

    I’m not really a sweater either. I actually love when I really work up a sweat–it’s reassuring. Once in spinning, a drop of sweat fell off my forehead and on to the floor. Too much info, but at least there was no doubt in my mind that I had pushed my self to the edge.

    I never sweat…it’s weird. But I love the feeling after exercise and I’m glad you stuck with it.

    I don’t sweat a lot either when I work out- it kinda freaks me out. Yay for completing the class.
    I just posted about my dinner- the sweet potato and cottage cheese combo- YUM!

    I really hope this doesn’t offend/upset you…that’s not my intention! But…I’m not sure you’re eating enough calories. Your dinner was pretty low in calories after a spin class where you probably burned 400-500 calories.

    I hate when they don’t play the music loud enough in fitness classes! It really helps when it is pumping, definitely gets me in the zone 🙂 Good for you for sticking it out!

    Your dessert looks like that really good sponge chocolate cake that they served in my elementary school cafeteria! Or old school birthday cake! Either way totally delish, good luck at work tomorrow!

    yeah… i’ve walked out of spin class before… embarrassing for sure 🙁 Haha. Way to stick it out!! Did you tear your vitamuffin into pieces?

    With your baking expertise, can you think of any healthified chocolate recipes that would be a bit more natural than vitamuffins (and less expensive!) but still have roughly similar nutrition info? I’m thinking they could be an amazing staple in your future pastry foray!!

    I was on the hunt for the Celestial Seasonings Sugar Cookie tea in California as well! I don’t know if you have grocery stores called Henry’s where you are, but that’s where I finally found mine! Along with Gingerbread Spice tea, too. I had been itching to try them since you wrote about, them, Jenna – and they are delicious!!!

    I am jealous about the delicious vitamuffins that you are always showing us! They look SO good. I live in Chattanooga, TN; and I cannot find them anywhere! I hate to order food online, but I might just have to do it…Those Vitamuffins look divine!

    My HRM told me I only burned 320 last night in spin class—400-500 calories burned is a very generic number and not the same for everyone!! I ate something quick and fast when I got home that filled me up just fine and if you look back to my meals during the day you will see that they are quite caloric (larabars, peanut butter toast…). I eat what feels right to me although that probably isn’t right for everyone! Every body is different with different needs 🙂
