Ready to Roll

Good afternoon blog world!

I’m coming from another crazy day at work. I know I say that every day but today really was with all the prep going on for tomorrow. I definitely started it right though with a big bowl of chunky monkey oats–made even BETTER with chocolate peanut butter!!!

Heavenly chocolate peanut butter swirls. How could you NOT be happy after eating this?!

I used 1/2 cup multigrain cereal made with half water and half silk vanilla and stirred in a half scoop of chocolate protein, half a banana and 1 tbsp chocolate peanut butter!

A couple hours later I had this deliciously ripe red pear:

Followed by the most amazing bar ever….heated up in the micro of course for that just baked cookie-ness:

And for lunch I had this yummy Amy’s pocket sammie:

I used to eat these spinach & feta pocket sandwiches ALL THE TIME my senior year of college. They taste absolutely amazing and are a very quick and portable lunch option! I don’t know why I haven’t had one in so long because it pretty much rocked my world today!

I also had a vanilla oikos with lunch

I worked a little overtime again today and when I got home I really wasn’t all that hungry but I snacked anyway since I’m going to BodyPump at 5:30. I had a banana with a tbsp of chocolate peanut butter 🙂

My day at work was consumed with bread baking, which I love! Baking bread is my favorite thing to do…much more than decorating cakes or making intricate petit fours. I like to get in there and get all messy with the bread and then watch it take a life of its own. I’m a dork, I know. I started making 400 rolls then I made some pumpkin bread–

And then I made zucchini bread—check out the lovely grated zuccs!

So lovely! Too bad that the bread is filled with trans fats from the shortening in the recipe—and, yes, the shortening we use DOES contain 4 grams of trans fats. I checked! Ewww!

I also made whole wheat baguettes, which contained no icky fats…only good whole wheat flour, water and yeast 🙂

I also assembled 260 mini pumpkin whoopie pies and about 200 of these chocolate macaroons (sandwiched together with buttercream)

And, after all that, it was definitely time to go home and rest up for an early morning! Adam claims to be working til 1 am tonight then getting in at 5 am tomorrow morning but I’m just hoping to go to bed super early and then wake up at 4:45 and head on in. It might be painful but then at 2:00 I can say “GOOOOOODBYE!!!” and start my drive home! 🙂

I did take a break today to stir the giant VAT of stuffing…….I believe it was sausage cranberry stuffing!

I’m going to my last BodyPump class tonight for the week and then getting everything ready for the morning.

    I LOVE those spinach & feta pockets! I used to eat them all the time too, but haven’t had one in a while.

    I think it’s great that you are motivated enough to go to Body Pump after working so hard!

    So can a macaroon be two things: the coconut cookie version and the sandwich cookie version? Confusing! but tasty 🙂

    Those spinach pockets are A-mazing! I haven’t had one in a while either! All of your baking looks yummy, as usual. AND- the oats with the chocolate PB- to die for.

    What, you don’t like some trans fat every now and then?
    Haha, I’m totally just kidding. 4grams? yuck!
    I have never seen so much stuffing before! You could take a bath in that thing! Crazy. Although it might be good for your skin…. lol.

    Everything in this post looks amazing! I wish they should chocolate pb near me! The only place I’ve ever seen it is Target for 7.99 a jar! Outrageous!

    Hey what type of protein do you use?! I am really wanting to start using protein powder (especially in my breakfast cookies, mmm!) but I’m not sure what the best/healthiest/most natural is. THANKS!

    Usually I use Designer Whey chocolate in my oats. I also like the vanilla kind to make a smoothie with!

    Do you use really small spoons for your oatmeal or something? That definitely looks like more than 1 tbsp of that PB!

    Sarah,

    Nope—I used a measuring spoon to accurately measure 1 tbsp of that peanut butter. I never use measuring spoons to measure things like that but with that pb i have to because its SO GOOD and I would totally eat the entire jar in one sitting! I have to practice portion control! 🙂
