Is It Friday Yet?

Hi friends!

I hope yall are having a good Tuesday. I wish it were Friday already!!!!

This morning I started my day with a bowl of overnight pumpkin banana oatmeal:

This heavenly mix consisted of:

1/2 cup oats mixed with 1/2 cup water and a pinch of sea salt (left in the fridge overnight)

1/3 cup pumpkin

1 tbsp almond butter

1/2 of a banana, smashed

a WHOLE lotta cinnamon!

and topped with a drizzle of agave nectar!

It was delicious!

Around 9:45, I snacked on some nuts:

And then at noon I had my lunch spread:

I heated up the pita in the micro at work til it got all soft, chewy and delicious and I topped it with the laughing cow and my olive sundried tomato hummus!

It was soooooo yummy! I also had my pear and spinach and was perfectly full.

Since I’m going to Zumba tonight from 6:30-7:30 (!!!), I divided my afternoon snack in two.

I just ate half of this beauty and plan to eat the other half before I head over to the gym around 5:30. It was delicious! It sort of reminded me of the carrot cake one…but this was very pear-like!

Today at work I baked a ton of cookies. Seriously, I feel like I baked cookies for 8 hours. I baked peanut butter:

Phew! I also made bread pudding for tonight’s prime rib night dessert buffet. It was fun because Adam told me the flavor of the pudding was totally up to me! I went crazy and concocted a coconut macadamia nut bread pudding that had a cup of Malibu coconut rum in it! I can’t wait til tomorrow when I get some feedback on how it turned out…

Alright—I gotta run and do some laundry and take out the spaghetti squash I have in the oven! 🙂 Wish me luck for Zumba and I’ll be back tonight!

    You’ll love Zumba, so fun. I love running because it is SUCH A CHALLENGE, but I love dance and spinning because they are addictively fun!

    I absolutely LOVE all the pics of the stuff you bake Jenna! I have always been a a fan of your site but since you started at this internship this has been the first blog I check every day because I can’t wait to see all the yummy baked goods! I hope you keep this up when you get a paying job!! I’ll still be a fan even if you don’t though 😀

    Haya,

    That is something called Hale Sugar, which is used as a garnish. Basically, its just huge clumps of sugar granules. 🙂

    I’ve been reading your blog for a few months now and I absolutely love it! Your positive outlook and your healthy attitude towards food is very encouraging!

    I have a question about Vitamuffins – they look so delicious, but I don’t know where to find them! Can you buy them at Whole Foods? I tried looking around yesterday with no success…then I realized I didn’t know if they’d be in the freezer section, or on the shelves, etc. Where do you buy yours?

    Ooohhh yum! I love bread pudding. My stepdad makes a white chocolate mango bread pudding that is one of my all-time favorite desserts… 🙂

    What’s the advantage of leaving oats in the fridge overnight?

    Olive,

    There’s no real “advantage” other than you don’t have to cook them in the morning because when you soak them with water overnight it softens the oats and when you mix in yogurt, it makes them super creamy and delicious without using a stove or microwave!

    It seems to be totally hit or miss. I have never seen them at whole foods and my publix JUST started carrying them last week evidently. I would try the vitamuffin website if you can’t find them and you can order the mix! I am addicted to the bad boys!

    Olive, I find it makes a yummy difference especially if you soak the oats with almond milk or regular milk and spices–the oats are like SPONGES and absorb all!!

    Can you make overnight oats but still warm them up in the morning? Part of what I love is how warm they are in the mornings – especially when it’s freezing outside! Like now! 🙂

    I suppose you could but it wouldn’t be any different than just cooking your oats in the morning. It would just be more work the night before to get the same end product after cooking. I would just go with your hot oats during winter and switch to overnight oats in the summer! Unfortunately, I live in summer year-round (yes, unfortunately! I wish we had a change of seasons here!!) so overnight oats are great for me no matter the season!
