Good Laaaaaaaawd, it’s been one of those days.

Four loads of laundry
Two hours at the Verizon store (trying to fix my broken data card)
One apartment deep clean
One major grocery shop
Twenty minutes of sprints on the apartment treadmill
One hour of phone calls, emails and appointment setting
1,000 words written for the book in preparation for my conference call with my editor tomorrow and my meeting with Marcy on Wednesday

After all that, I needed a glass of wine.

KJ to the rescue! Love this Meritage (red wine blend!) because it’s affordable and delicious. I poured myself a healthy sized glass and wrote on. And on. And on and on and on.
Might have to delete some of that. Sometimes I ramble when I write….especially whilst under the influence. And by under the influence, I mean I had one glass of wine. Promise! I still managed to make a delicious Israeli couscous salad for dinner, topped with Athenos feta.

This was painstakingly simple. All I did was simmer some Israeli couscous until it was tender (bout 10 minutes or so) and then toss it with a few sliced kalamata olives, sundried tomatoes and a little dressing made from olive oil and balsamic. Topped with feta, of course!

I promise to try to be saner tomorrow. Whewwwwwww!

I am still immensly popular in my family with the wine afficianado and he still refers to it as his best holiday experience ever.
I like KJ for this reason alone. 🙂
