Not Meant For Cold

Hi guys!

Well, as you could clearly see, Miss Bella and I had a blast yesterday afternoon baking those tiny cupcakes! Ain’t she adorable, folks?! Seriously—I just loooove her “baking outfit”, complete with hot pink leggings and tiny flats. And she wouldn’t even hear of wearing my HUGE chef coat to cover it up (I wouldn’t either if I looked that cute) so she wore her new cupcake apron! Can you tell that someday I hope to have little girls??! 😉 I can’t wait to play dress up!!

Bella’s mom came around 4:30 to pick her up and I had a little snack because I wasn’t really in the cupcake mood. I’ve spent WAY too long in front of an oven today! After 12 hours of baking, sugar just doesn’t seem as good and your body actually starts to crave healthy things! So, I had a yogurt with a yummy weetabix biscuit in it!

Funny enough, weetabix biscuits used to be my FAVORITE cereal when I was little. I loved them because they were actually like a biscuit and I could pick it up and eat it or smash it in my milk. I’ve sort of forgotten about them over the years and then today at Greenwise I saw a girl with a box of them in her cart and something in my brain clicked—I LOVE those! They are incredibly healthy and a great source of whole wheat. I am envisioning yogurt bowls with weetabix + almond butter + raspberry preserves in the near future 😉

And then for dinner last night, Ryan and I hit up our favorite Mexican restaurant right down the street, Chihuahua. We have eaten there once before and we both loved it and last night was no exception. I ordered the spinach enchiladas with veggies and they were AMAZING. Two corn tortillas stuffed with spinach and garlic and topped with monterey jack cheese and sauce. Surprisingly, it was actually quite light when compared to my old favorite—CHEESE enchiladas. In college, my good friend Amari and I would make every Thursday “Mexican Night” and we would go to this total hole in the wall place near campus and eat chips, salsa and cheese enchiladas to our heart’s delight. This veggie version was actually tastier (lots of garlic!) and I’m sure healthier! I was starving and definitely cleaned my plate =)

And then I promptly passed out as soon as I came home. I actually woke up this morning around 4:45, a major downfall of my job. My body is just so in tuned with going to bed early and waking up early that it makes it really difficult to break the habit for two days during the week! So, I woke up at 4:45, laid in bed til’ 5:45 and then woke up, ate half a banana with pb and set out for my run!

This morning I wanted to “test” myself since my 5K is a week from today. Unfortunately I picked the coldest morning EVER to do it! When I woke up, it was about 38 degrees outside and I seriously debated just saying screw it and going to starbucks instead. But alas, I put on my shorts, long sleeved nike top, shoes and old sorority hat and hit the road. Just so you know—I really did NOT enjoy it! How in the world do yall stay so dedicated in the cold??!!! Sammie, I am talking to YOU! 😉 I actually only ran 2 miles because I was just SO darn cold!!! And, right when I left the house, I shot like a bat out of hell because I was so freezing and I think I totally wore myself out because after only 6 minutes, I was huffing and puffing and freezing and shivering……not fun. All the other runners looked so warm in their sweats and vests and gloves and there I was, in my tiny shorts! No wonder I was cold. I definitely will NOT be doing that again any time soon. I thought I would warm up once I got my body going but…no. This Florida girl was counting down the seconds until I was back in the heat!

When I got home, I decided to do something I haven’t done in FOREVER—-go to Panera! Now, in my industry Panera is often just referred to as the “enemy”—sorry if any of yall work there, but it sort of puts to shame all of us scratch bakers because nothing is really made from scratch at Panera and yet it is SO popular. I know I am totally busting your dream of bakers in the back mixing flour, water and yeast together and producing perfect bagels every single night, but they do get everything in frozen and already par-baked.  ANYWAYS! Regardless, I still do love me a Panera bagel…..whole grain (or, as it used to be called, nine grain) to be exact. When I was a freshman in college I probably ate one of these bad boys AT LEAST three times a week because the coffee shop on campus carried Panera products and was on the meal plan. I haven’t had one in a few years but today was time to rekindle the old flame.

I haven’t had cream cheese in forever and this made me realize how much I missed it! So delicious and creamy!

So, Ryan is out of town for the rest of the weekend on business (his flight left at 7 am this morning!) and I actually am taking a little trip to Orlando today to have lunch with none other than the fabulous Fitnessista at Whole Foods! She emailed me last week to tell me she was coming into town and asked if I wanted to meet her and her friend Megan for lunch. Of course I do! And I can’t wait for a trip to Whole Foods heaven….we have one here of course, but the Orlando store is just aaaaaaaamazing. I know I work for the competitor but I can’t break my Whole Foods addiction that is still going strong after about 5 years.

    Bella was so cute! It looked like ya’ll had a great time. I am taking my husband out for mexican tonight to celebrate his birthday—I will keep an eye out for spinach enchiladas- those sound good! And I’m sorry your run was cold; those are no fun! :<

    I miss weetabix biscuits so much!! I used to eat them all the time – damn my gluten/wheat allergy 🙁

    I love how everything Bella is wearing is coordinated around the pink theme. I totally did that when I was a kid. So cute.

    Hi Jenna!

    I love Weetabix, too! Something I like to do with them is put one in my oats. I use a 1/4 cup of oats and a broken up biscuit with 1 cup of liquid and a mashed up banana. YUM!

      Honestly, i have NO earthly idea. Yes, it was in Tuscaloosa but I couldn’t tell you the name. All I know is that it was in a shopping center and it was definition of sketchy. Sorry!!

    running in the cold definitely takes some adjusting! It’s all about the right gear! And I try to never look at what the exact temp is before I leave.

    Such an awesome cupcake baking session!

    Running in the cold is really hard for me too – I tend to over dress, which is just as bad as under dressing – but make sure you check the temps and always cover your head and hands when its chilly! 🙂

    You have to get some tights if you’re going to run in that sort of cold! Under Armour makes great ones for the cold.

    Love Wheetabix Biscuits…although I find them too messy to eat handheld. I love putting them into smoothies!

    Sorry your run didn’t go well – it’s hard to run when it’s cold, but you need some pants, girl! 🙂 Anytime it’s under 50, I wear pants because I’m always so cold when I’m starting out.

    I’m with you on Panera Bread – my issue though is how ghastly the nutrional stats for everything are. I am definately one to not care about calories if something is tasty but their food is just ridiculous – a child’s turkey sandwich had more than 700 calories!

    Bella is adorable! Look at those beautiful eyelashes! I totally want that cupcake apron, too. Wheetabix are so good, but I feel like they’re expensive whenever I try to get them. Mmmm bagel with cream cheese- now that’s something simple and delicious that I need more of in my life. HAVE A BLAST with the ladies at Whole Foods!

    If its 25-35 degrees, I always wear nike running pants, a moisture-wicking long-sleeve t-shirt, a light jacket, headband (to cover my ears), and gloves. You can’t go wrong! Now when there is snow or ice on the ground…that’s a different story.

    Haha, I am sorry your run was a bit rough this morning!!! I would have been out there in shorts, too. I am always afraid I am going to get SO hot that I will just die…even when it is cold. Haha, oh well.
    That Panera bagel looks real good. I have never had Panera!
    And, eek- I am a Mexican food lover too. And, that veggie enchilada looks soooooo yummy. And Sangria! I die.

    I totally feel you on the cold! I died the one morning it was 38 degrees in SoCal! I don’t feel comfortable in any of my running tights so I was in shorts too 🙁

    I end up running outside in the cold whenever the sidewalks are clear enough to do so (I live in Chicago and we’ve had a lot of snow this winter). My favorite trick for staying warm is putting conditions into the “What Should I Wear?” tool on the Runner’s World website to figure out what combination of layers will keep me warm enough. http://www.runnersworld.com/cda/whattowear/0,,s6-240-325-330-0-0-0-0-0,00.html

    for starters, i need to hook myself up with a cupcake apron and matching dishes. i love bella’s cooking fashion, and those cupcakes, ahhhhhhh. so cute.

    dinner last night looks amazing. and i’m impressed you even made it 2 miles in shorts and temps in the 30s. definitely need at least coverage to your knees with that weather!

    I’m just crazy 🙂 and I need to get off the treadmill every now and then. I wear a lot of layers. This morning I had on 2 pairs of running pants, 2 fleece sweatshirts, a hat and very thick winter gloves – it wasn’t even 20 degrees out, yikes.
