Pancake Time!

Good morning! It feels like Saturday to me and that is why………………it was pancake time!

I recently re-found my FAVORITE MIX EVER at Greenwise:

I used to buy this at Whole Foods in Charleston and haven’t been able to find it since I moved two years ago! I LOVE it. It makes the BEST pancakes EVER and all you need to do is add water. I mean, check out these stellar ingredients:

So, this morning I used it to make blueberry pancakes with strawberries. I smearedΒ  a 90 calorie Barney Butter packet on my pancakes and drizzled them with pure maple syrup:

I ate a banana afterwards because I was still hungry!

SO yummy. I could eat about 17 more! πŸ˜‰

I’m getting ready to head to yoga this morning. My mom and I are going to a 90 minute hot flow class, which will feel GREAT because it is freezing outside!! Cold weather makes hot yoga all the sweeter, don’t ya think?!

He made a “treat” with two of my brother’s reject cookies. At least he used the coconut milk ice cream that I had bought and stuck in his freezer! Hahahaha I laughed so hard when I saw this!

    Where on earth did you find coconut milk ice cream? I get the coconut milk yogurt at Earth Fare, but haven’t seen the ice cream. Yum yum yum.

    Was your Mom always into yoga, or did it take your encouragement? I’m trying to convince my own mother to take some classes with me, and right now she is doing the yoga exercises on that Wii game. I was just curious because that seems like a really cool way to bond with your Mom! πŸ™‚

    Jenna was quite surprised when she found a picture on her camera this morning of my recreation of the infamous Costa Rican “Trit” or as we now call it, the Michael Phelps Munchie Meal.
    Recipe:
    Heat up 2 soft chocolate chip cookies, smear some ice cream (preferably chocolate peanut butter) and add chocolate sauce. I belileve they are lo-cal/lo fat/lo cholestorol!

    And I can attest that this pancake batter is the best I have ever had, seriously, amazing, (that was my plate in the top pic)!!

    Hi Jenna!

    Oh yum, I am going to look for that mix at Whole Foods! Delicious! How much of the mix do you make for 1 serving? Do you follow the instructions on the box when cooking just for you?

    Btw, THANK YOU for helping me eat a proper portion (maaaaaybe a tad over) of Annies/broccoli/tuna last night. I have LEFTOVERS—not something that usually happens with Annies! THANK YOU!!!! πŸ™‚

      I never really take to heart serving sizes on mixes because it just gets complicated and I tend to always eat more than the serving size anyways! For this specific mix, I just combined a cup of mix with a cup of water and it made 6 pancakes…3 for Ryan and 3 for me! No matter what the mix is, I most ALWAYS eat three good sized pancakes!

    how is that coconut milk ice “cream”…ive been eyeing it for a bit. your brekkie looks DElish!! ive never seen that pancake mix but the ingreds look nice and your final product (toppings and all) is mouth watering for sheeez.

    btw i just bought the book “bread alone” at B&N. cant wait to dig in!

    Pancakes look delish, but I think I liked Ryan’s treat even more. πŸ™‚ I haven’t seen the coconut milk ice-cream in that flavor, but I’ll definitely be on the lookout!

    The only problem with Ryan’s snack is that he doesn’t have a cup of coffee next to it! I admit – there is NOTHING I love more than a chocolate chip cookie and a huge cup of coffee for breakfast… too bad now I am going to have try that combo with ice cream… desert for breakfast anyone?!
