Mornin’!
I cannot seem to wake up this morning…I don’t know why I feel so TIRED! I slept for 8 hours and have had a strong cup of green tea but still….maybe it’s the fog.
I was starving when I got up at 6:45 and made a large pancake for breakfast to fuel me for my first bike ride!

This is a pancake made from Kodiak Mix (1/3 c mix) topped with barney butter, whatever was left in the greek yogurt container, a banana and raspberry syrup. Mmmmmm perfect fuel 🙂
Phillip isn’t coming till 9 but I’m going to practice NOW getting on and off the bike and clipping in and out of the pedals so I don’t make a fool of myself and fall on my face. Excited to switch over and use the cycling feature on my Garmin!
If I don’t come back you may have to come out and find me!! 😉

January 28, 2010 at 7:59 amDo you plan to do any type of fundraising? It’s a lot to ask people to just donate $20 or more… Maybe you can get SuperFood (or another company you don’t work for) to donate some products. Then the people who do donate can be entered into a raffle.

January 28, 2010 at 8:39 amI was nervous the first time I got clip in shoes too! Just remember, push your heel out to the right or left (depending on the foot) and they’ll pop out easily. Don’t try to lift your heel up. Have fun!

January 28, 2010 at 9:23 amOn my first ride with clips I took a big spill in front of the Midway in San Diego. Yeah…lots of people all around. I survived and now I don’t worry about it. You’ll get the hang of it!! Oh, and I totally recommend getting a bike rack. I use mine all the time.

I’m such a klutz that I don’t have the guts to try the fancy-schmancy pedals- although I want to. The fear seems to be outweighing the desire for now. Let us know how it went!

I went on a bike ride without them and have bruises on my butt! And it was a short ride! And those clip shoes scare me to death!
And boy does that pancake look great! I think I just may have to go online and buy some!
I just got back from a trip to Whole Foods! I always think of you when I go there! I bought a loaf of the millet bread! I forgot a few of the things I was planning on getting….I guess I will have to go again next week!

Just curious…I know in the past you have said that you always use a 1/2 cup measurement of pancake mix…which is exactly how much I always use. Is 1/3 a better measurement when making pancakes for one person? Thanks for your advice 🙂

Well Kath tells me that 40 grams (the serving size) is actually 1/4th cup mix. Hah!! So I decided to see if I noticed a difference between 1/2 and 1/3 and I don’t…so now I just use 1/3rd.
