Raspberry and Cream Cupcakes

You’ll never believe how easy these springtime cupcakes are to make! They might look fancy schmancy, but I promise they are not. At all. Really!

To make these, I’m guilty of using a liiiiiitle secret ingredient known as Betty Crocker cake mix. Don’t judge! Sometimes you just gotta do it. I mean, you definitely don’t have to use cake mix here but it sure speeds along the process of these beauties.

Filled with a lightly sweetened raspberry whipped cream, these cupcakes are perfect for Easter or anytime!

The smell of these boxed-mix cupcakes baking totally brings me back to junior high when I used to slather cake batter scented lotion all over my body. Anyone?? I may or may not still burn cake batter scented candles. I think my top three favorite food scents in the world are bread baking, chicken roasting and vanilla cake batter.

If you want to be an overachiever, try this recipe for your cupcakes {minus the funfetti…or not}!

All you need for the filling is just cream, sugar and raspberries. So simple. So good. They taste like a shortcake and never fail to wow people when you bring ’em out. Just don’t let them in on all your secrets, mmmk?

Raspberry and Cream Cupcakes

yields 24 cupcakes

Print this Recipe!

Ingredients:

1 box vanilla cake mix

1 1/2 cups heavy cream

1 1/2 tbsp sugar

12 oz fresh raspberries

Directions:

Bake cupcakes according to package directions. Set aside to cool completely.

Whip the cream with the sugar to form soft peaks, add the raspberries and continue beating until raspberries are crushed and cream holds peaks.

When the cupcakes are cool, gently cut each one in half. Scoop (or pipe) a small amount of raspberry whipped cream into the center of each cupcake then replace with cupcake top. Pipe or scoop additional whipped cream on top. Garnish with fresh raspberries.

*These cupcakes can be made one day ahead of time and kept in the fridge.

Time:

1.5 hours (includes time to cool cupcakes)

    Ingredients:
    ? cup Blueberry
    5-7 soaked overnight Almond nuts
    DRY INGREDIENTS
    4 tbsp Whole-wheat flour
    2 tbsp Sugar
    1 pinch Salt
    Β½ tsp Baking powder
    WET INGREDIENTS
    8 tbsp Almond Milk
    1 tbsp Extra Virgin Olive Oil
    Β½ tsp Vanilla extract
    Delicious!
