Sometimes You Just Need a Cupcake

Morning!

Here’s a food recap of the past 24 hours! Yesterday I had a kick butt yoga class then raced home and made a quick lunch before meeting a friend for a writing workshop:

That would be a salmon burger topped with dijon mustard and goat cheese, baby carrots, roasted kabocha squash and cantaloupe. Slightly random but very good! I actually didn’t snack at all yesterday afternoon and instead sipped on a nonfat mocha while writing, which coated my tummy and made me feel pretty full.
However, dinner was SUPER random but it was exactly what I felt like.

Yep. A big bowl of yogurt with blueberries, blackberries, almond butter and raspberry jam. With a carrot cake cupcake 🙂
Then I polished off the rest of the coconut ice cream!

Heck, I never promised normal meals every day….sometimes you just feel like cupcakes for dinner!
And chocolate chip pancakes for breakfast!

It’s snowing in Charleston!!!!!!!!! I can’t even believe it. As much as I wish I was there playing in the snow on King Street, we are supposed to have the best weather ever today….highs in the upper 60’s and sunny. I can’t complain! I want to spend the day outside, soaking as much sunshine as I can into my bones. 🙂

    I love that you eat what you want somedays even if it wasn’t the healthiest. At least it was with some yogurt and berries right 🙂

    YUM! Lol– in all my four years in Charleston, it only snowed ONCE, my sophomore year, and people were going CRAZY!!! So fun.

    Now that I live in PA, it’s not quite as fun 🙂

    I’m in Georgia and it snowed all yesterday afternoon/night, but I woke up this morning and it was sunny and pretty warm…guess that snow won’t be sticking around too long!

    I know! I cant believe it’s snowing in charleston either! I live in upstate SC and it’s like the ENTIRE state got snow!! Craziness!

    I love that eat what you want and are in tune with what it is you are actually craving. I just wrote about that on my blog, because especially as someone recovering from an eating disorder, it’s important to consciously make those comforting choices sometimes!

    We had Kodiak pancakes for breakfast today! My husband had them for the first time and loves them! I will have to add some choc chips and maybe some banana next time! Loved your random meals yesterday! Sometimes they are the best!

    haha, I used to read your blog every day, then exams took over – SO GLAD to see you’re still having lots of roasted kabocha squash!! I have it every day too 😀

    Re ‘Getting sunshine into bones’ with Dr. Andrew Weill upping his recommendations for Vitamin D3 as a cancer fighter–that is a great idea–he also is an advocate of sunshine for health.

    It snowed hard for Charleston! It was pretty crazy! My boyfriend’s power even went out for about 13 hours. Amazingly, it’s pretty much all gone this morning.

    There’s nothing better than carrot cake! How is it that the meals that aren’t quite standard dinner fare are always the most delicious and satisfying? I think I could eat a sweet, breakfasty combo for every meal!

    Yum – your pancake looks amazing!

    I haven’t tried a cupcake with my yogurt dishes, but I do add a muffin once in a while. I have a really yummy recipe for zucchini lemon muffins and I’ll crumble one on my yogurt – it tastes so decadent!
