Hi friends!
Thanks for all your sweet and supportive comments this morning. No word yet—that might be a bad sign? lol Then again, its only 9:30 am in California. I guess it is totally out of my hands and I am fine with that!
This morning I went over to my parent’s house for awhile and while I was there I snacked on more cantaloupe!

I got three from Costco yesterday and gave my mom one. It was SO sweet! Probably the sweetest melon I’ve had all summer. So far I’ve tried the blueberries, plum tomatoes, red pepper and cantaloupe from Costco and I am incredibly impressed by it all. The blueberries are the best I’ve had for a long, long time! Way to go, Costco! You are the produce king! 🙂 Next time I’ll have to get peaches, my absolute favorite summer fruit!
Lunch today was, yet again, a huge salad! I also had a bowl of the remaining avgolemono soup with a sprinkle of feta!

There was also an unpictured mug of jasmine green tea + 1 square of Lindt Fleur de Sel! 🙂
Originally our dinner plans were homemade shrimp po boy pitas (from this month’s Cooking Light) but I just received word that we are meeting some of Ryan’s family friends that recently moved to the area (and to our apartment complex) for dinner at Ciccio & Tony’s. I’ve been to Ciccio’s once before and wasn’t terribly impressed so tonight I might order something from the sushi side…they have interesting “Water Bowls”, which sound basically like deconstructed sushi rolls in a salad form. Sounds good to me!
Sad because you didn’t score a ticket to the Summit?
Caitlin will be auctioning off ONE Healthy Living Summit ticket tomorrow to benefit Team in Training! This is a great opportunity to snag a ticket and donate money to a very charitable cause. Remember that this is only the ticket to the Summit; airfare and transportation are not included.
See you tonight! Fingers are crossed!

July 7, 2009 at 12:54 pmYour salads always look so delcious! And I love avgolemono! Being a Greek girl we have it available all year round. I’ve never made my own but now I might have to try. What recipe did you use?

July 7, 2009 at 1:04 pmCait,
I used the wonderful recipe for Chilled Avgolemono Soup with Dill from this month’s issue of Gourmet! I loved it!

July 7, 2009 at 12:55 pmI almost had the exact lunch, minus the soup it’s the same. Your going to get it, I have a feeling and I am pretty good at things like that. We all adore and love you anyways, no matter what you do. I wish I had a costco, I actually shop mainly at Wholefoods and get some amazing deals most of the time, we have a huge selection of local produce, meaning it’s super cheap, I am talking less than a doller, lb, each, ect. Enjoy your day and hopefully your doc appt goes well.

July 7, 2009 at 1:45 pmJenna,
I think this it is obvious you don’t, but do you use dressings on these salads? Or do you just use your toppings (like hummus, guac, etc) as the “dressing”? Do you have recommendations for a light base dressing to put on just the lettuce maybe to keep things not too dry? Thanks!
jenna
July 7, 2009 at 1:47 pmblueberrybabe,
Nope—I usually always go dressing free and use hummus as the dressing! I’m just not a big dressing fan. If you like dressing though I suggest an all natural brand like Annie’s.
