Stuffed?!

Oh, I wish I was getting ready to go to a 5:30 Bikram class right now!!

Reality flash! I’m getting ready to go to school early to give my excused absence documentation to the dean and hopefully catching up on what has been going on for the last few days before settling into another night of baking. I know that I missed a Practical (yikes!!) on Monday and Tuesday, but I’m not sure what I missed yesterday. I also missed a written test! Oh well, I’m sure I will get it all caught up. It’s just crazy that next week is the last week of this class and I feel like I haven’t been there at all. As I said before, I made Skinny Bitch in the Kitch’s (now to be known as SBITK because typing that makes my hand hurt) Stuffed Shells. Man, these were good! Stuffed shells are Ryan’s favorite meal that I make and I used to make a darn good four cheese stuffed shells from Cooking Light. These were very good, different, but good. The tofu ricotta was flavorful and I swear that if you didn’t know it was tofu, you would never know the difference. All the onions, garlic and spices gave the tofu mega flavor and the consistency was actually much like that of ricotta. The only difference between this and regular cheese stuffed shells (well there’s 2 differences actually)—the first is that while these were really good, these weren’t “cheesy” in the sense of cheese oozing out of stuffed shells. They were more contained. The other difference was that after eating a plate of them you didn’t feel like you were about to have a child made of cheese. I ate four big stuffed shells and I feel light and not stuffed at all. I would definitely make this again for my family and Ryan to see their reactions on it! I also had a spinach salad with carrots and cucumber and Annie’s Tuscany dressing.

    To continue our discussion of Amy’s roasted veggie pizzas from yesterday: today I had Trader Joe’s brand roasted veggie vegan pizza. It was SO GOOD!!! It was a full size pizza, with serving size being 1/3. I felt like it was enough food (when supplemented with a salad) and it was GREAT. For those of you that have TJ’s, it is a great (cheap) alternative!

    Your meal SOUNDS fabulous – it’s great how much lighter the veg-versions are (i.e. you don’t feel ‘heavy’ after eating ’em). Hopefully you’ll be able to upload your photographs later!

    Oooh stuffed shells? SO good. I’ll have to get my hands on that recipe (so I might just have to go out and buy the book) so I can try them!
