Breakfast/ Lunch

Taters in my Bread

Hi guys!

I had really fun surprising news today—I don’t have to work again ’til MONDAY! Hello, long weekend! I do have my training class tomorrow night but the main point is that I don’t have to set an alarm for the next four days. Praise God! =)

I started my morning with another delish banana and chocolate peanut butter—

And had a big ol’ bowl of chocolate almond oatmeal (made with half 2% milk, half water and 3/4th cup oats) for breakfast around 8:00:

I also bought a cappuccino after breakfast for a little pick-me-up since, while I slept fine last night, I just feel SO tired today! It was a yummy treat!!

I think the highlight of my day was the bread that I made at work! Usually I just bake the bread, I don’t mix it. However, today I wanted to test out a new recipe out of my “The Bread Baker’s Apprentice” book for Potato Rosemary Bread so I did all the dirty work. I made the mashed potatoes, roasted about 12 cloves of garlic, mixed it, kneaded it and let it rise. The final product was a HUGE success I’d say!

I made a small batch of only four loaves so my manager could try it and see if maybe we want to start making it and selling it on the weekends. Hopefully he liked it as much as I did! The bread was just going into the oven as my shift was ending so I hung around the store and grocery shopped (poor me!) while it baked so I could buy some right out of the oven.

I finally got home around 2:00 and, for lunch, had a thick slice with Sabra’s roasted garlic hummus as well as an Oikos honey yogurt-

AMAZING!!!!!!!! The mashed potatoes in the dough made it SO incredibly soft and the roasted garlic flavor was just to die for. MMmmmm

I could easily eat that entire loaf of bread….dangerous!

Look what I found at my store today! They FINALLY got Chobani!!!!!!!!!! =)

I’m off to Ryan’s to start cooking. Our oven is still broken over here :(. I’ll see you tonight!

Kelly – I got my chocolate peanut butter (Peanut Butter & Co. Brand) at Walmart. I’m pretty positive you can also order them online. Good luck finding it (but be warned – the one I have is pretty high in sugars…def. an occasional treat!)
