Breakfast

Weekend!

Ahhhh….Saturday morning at last! My practical went okay last night. I thought I did horrible because my Pithiver exploded in the oven AGAIN but I think since I’ve had him before, my Chef cut me some slack. I actually got my grades back from my bread class and was very very excited to find that I got an A in the class! yay! That made my night a whole lot better. That, and that amazing chocolate peanut butter cookie I brought with me to class! I was actually still so full from dinner that I could only eat one of the cookies (they are super rich and dense!) and I gave the other to a friend in class who loved it as well. Ryan and my family will love these!

For breakfast this morning I made one of my traditional waffle sandwiches using two flaxplus waffles, some peanut butter,a little raspberry jam and a banana. A washed it all down with a glass of cold almond milk. I’m going to a yoga class here at 10:30 then am headed home this afternoon. Ryan is out of town on business and I am having some family time….going out to dinner at this new wine bar/bistro with my parents then sleeping at their house tonight. Good ol’ family bonding time!

Jenna, is that LeanDessert you have in the background?? what flavor? I have the cinnamon roll kind and add it to my oatmeal once in awhile- but I don’t really enjoy it as a drink..

haha Jenna– maybe you could call it a ‘Volcanic Pithiver’ and pretend that is supposed to happen. I’m sure it tastes great regardless… and wow, CONGRATS ON THE A!!!!

    Anon,

I really don’t know what that is exactly! Its my roommates! 🙂 I don’t really do the whole protein shake thing…I prefer to get my protein naturally in the form of beans, nuts, soy and whole grains.

oh btw, your brekkie looks great! What an neat idea to use waffles as bread… I am going to have to try that sometime this week when I need a portable breakfast!!

alao, I was just wondering if you had ever tried oat milk. I know you are a Hemp Milk Convert (along with Kath and just about all the commenters… VG I believe you are responsible for this enthusiasm?!), but I picked some up when I was @ WF the other day (Pacific Brand– organic, in the same isle as the hemp milk), and I love it. It is excellent in oatmeal, as one might imagine… haha. The nutrition facts are pretty similar (although the oat can’t boast about o-3 EFAs as hemp can) and one + is that it runs at least $1 less per quart. idk, just thought you (and others) might wanna give oat milk a try… anyway, have a great, relaxing weekend. 🙂

Jenna, I just recently re-discovered peanut butter (weird, I know! I didn’t eat it for like 3 months because I would always want more volume in my meals!) so all these posts about peanut butter are really inspirational to me! I’m in love with blueberry GOLEAN waffles with peanut butter…..YUM! sooo addictive! Congrats on the A, i’m sure it feels A-mazing. bah hahaha, so corny! Anyways, I hope your weekend goes wonderfully! I, too, am going home to spend some much needed R&R with the fam.

Your breakfast idea looks so good– and creative too :o).

Oh, and the icing on the cake in my post is from the cookbook Vegan Cupcakes Take Over The World (I am just a little bit in love with that cookbook!).

Have fun at yoga (I love yoga!!!).

I have a question for EVERYONE (Jenna included)!!

If you could only get one cookbook, Veganomicon or Eat Drink & Be Vegan, which would it be? I’ve had the chickpea cutlets and black bean burgers from Veganomicon and they were great! But I really want ED&BV after seeing Jenna’s cookies from yesterday! 🙂 Now I can’t decide which to get first.

I also wanted to say that today I made waffles using your banana waffle recipie Jenna, except instead of banana I used canned pumpkin. I added some ginger and cloves in addition to the cinnamon and nutmeg. They were soooo good!

    Good late morning ladies!
I just got in from Paris last night… boy, was it incredible and what a wonderful culinary adventure! Thank you for your advice about my 2 favorite desserts of the week. Yummmmy! Besides those afternoon snacks I was lucky enough not to eat out to often because my best friend’s family and friends love to stay in and cook. Every lunch and dinner was so delicious, I simply cannot get enough of French food and their eating ritual. I enjoyed absolutely every single morsel without restriction and found that I even lost 2 lbs. Crazy. Anyway, just wanted to check-in and let you all know how it went. Hope everyone enjoys their weekend! 🙂

Does either one of those cookbooks (Veganomicon or Eat Drink & Be Vegan) include nutritional data for its recipes?

I’m debating between them as well. I have such a hodgepodge of things in my Amazon cart right now…

    Jenna,

The first thing that caught my eye in your picture is that adorable glass. I love elephants! Can I ask where you bought it? Too cute!

Congratulations on your well-deserved A. I’m so glad you’re receiving the credit you deserve. Have a wonderful weekend with your family! 🙂

Congratualtions on the well-deserved “A”!! I’m glad that the chef cut you some slack, since you ARE a diligent baker/student :0) Enjoy your family-time today, and the rest of your Saturday!

    **Jenn:

I know your question is directed at Jenna, but I just wanted to say that oatmilk IS delicious! I used to have it in my oatmeal all the time, since it tastes like oatmeal on its own :0) But I’m hooked on almond-milk and hempmilk (both of which I drink daily).

TimeofButterflies– I know that Veganomicon does not have nutritional data.. but I’m not sure about ED&BV

Neither of those cookbooks have nutritional data but they both are wonderful. Veganomicon is probably the most complete out of the two because it is like every vegan’s bible with every recipe you could ever imagine…I would buy both just to be safe 😉

    babycakes,

that glass is from anthropologie. I used to work there and therefore my entire house (and wardrobe) is from there!!!
