I apologize for the late lunch post! I went to Bikram from 12-1:30 and didn’t eat lunch until 2:00. Good thing I made a batch of Lindsay’s whole wheat carrot cake cupcakes this morning to tide me over 😉 I had one, sans frosting, as a morning snack before I went and it didn’t fail to supply me with the much needed energy to get through the challenging practice! It felt SO GOOD to do yoga today. I feel completely exhausted after a lack of sleep last night, but somehow feel restored after a tough, sweaty practice. I am going to try to go to a yoga class everyday this week while I’m home.
For my late lunch I made a hummus/avocado sandwich with about 2 tbsp of cedar’s hummus, 1/2 of a tiny avocado and a handful of baby spinach on rudi’s honey sweet whole wheat bread. With a large, ripe pear it totally hit the spot.
I’m off to get my hair cut! Yay! I figured I might as well since I’m at home with no plans. It’s been driving me crazy lately because I did once have a “cool” haircut (a couple months ago), but then it grew out and now its a total mom haircut. Boooooring! I want to keep the length but maybe add some texture, bounce…something!

I always shy away from eating (other than a bite of banana) before doing Bikram Yoga. How long before did you have the muffin/cupcake? I suppose I just need to experiment with it a bit as far as fuel because I often feel really hungry during class – but I am not sure what to eat before to keep me going, but not interupt with the practice. Any tips?

May 5, 2008 at 9:31 pmI have a baking-related question regarding the frosting on the cupcakes; what proportions of tofutti/sugar do you use to get it to a thick enough consistency to sit on top of the cupcake? Mine was always delicious, but far too running to cover the top of the cupcake without spilling over the sides. Yours always look so perfect!
I have to make more of these soon, yum!

ehh I should be better about correct proportions but honestly, I beat the tofutti with vanilla extract and then i just keep adding powdered sugar til its thick enough. Today I used 1/2 container of the tofutti and, I’m guessing, 1.5 cups of sugar. It helps to stick the frosted cupcakes in the fridge though because the icing hardens up!

I ate that muffin about 1 hour before practicing. It’s so different for everyone. I can really eat anything I want and then exercise and be totally fine but I know that most people can’t . The “yoga people” say that you shouldn’t eat anything 2 hours prior to the class and that’s a good guideline to use if you are nervous about it…or just eat something simple like peanut butter toast or trail mix. something with protein to get you through!
