I think both Dexter and I are a little bummed that vacation is over. He has just been sleeping under the bed all afternoon, not even coming out to eat, and I just feel blah. I guess that’s pretty typical though when you resume real life after a fun break. I just wish I was still in the mountains! 🙁 Not about to go to school!
This afternoon I didn’t work out (still laying low because of my cold) but I did clean, do laundry, make beds and catch up on emails and blog questions. I snacked on some fresh watermelon with a couple kashi crackers in the afternoon.
For dinner I decided to try my rotisserie chicken. It was so easy to carve and separate for lunches and dinner! I already made a delicious looking sandwich for tomorrow to take to work. Tonight, however, I just had it picnic-style (cold) with some bulgar wheat and broccoli. I honestly was not hungry at all but knew I needed to eat before school. This meal was quick, healthy and very comforting.
I’m bringing a snack pack of Annie’s chocolate chip bunnies to have for a snack later on tonight. Tomorrow I will get back on my exercise routine and hopefully I can shake this blah feeling!

July 8, 2008 at 2:20 amRotisserie chicken is a great save! My dad would never bother cooking his own (even if he knew how), so he just buys a rotisserie chicken at Publix and picks at it for a few days. It’s a good way to play around with Asian or Mexican recipes that call for shredded chicken!
