I think it’s a good thing I didn’t do anything tonight because, seriously, it’s 8:50 and I’m about to go to bed. I’m that pooped.
I haven’t really been that hungry all day and I attribute that to just being exhausted. After Ryan left for the boxing match though I stopped at the health food store near my parent’s house and picked up some dinner and a cookie. I loved their vegan spanokopita so much at Easter that this time I tried their vegan kale and butternut squash pie and, oh my gosh, it was absolutely amazing! I also got some rice with spices and spinach to go with it and had some green beans I found in my parent’s fridge. It was delicious, especially when paired when a nice glass of my mom’s red wine 🙂 For dessert, I had to eat the vegan chocolate chip cookie I picked up from their bakery case….zapped it for a few seconds in the microwave and it was soooo good. They make the best cookies…I’ve had numerous of these cookies in the past and have never been disappointed. They ARE quite large but I enjoyed every crumb.
Dexter and I are off to bed!
