A New Day

A new day has come and it’s a Friday! Hopefully today will go MUCH smoother than yesterday, although my hands are still burning !! I don’t know what to do! 🙁 I’m trying to resume as normal though and this morning I woke up, ate half a banana with almond butter, and headed over to the gym to do lower body. I did squats, lunges, calves, hamstrings, dead lifts and a little treadmill warm-up. When I got back inside I ate the breakfast that I made for myself last night, the Banana Pecan Rice Pudding Pie out of ED&BV. This was a nice switch-up from oatmeal! I halved the recipe so I would just have enough for two mornings and it turned out really well. It was very easy to make, especially if you have leftover rice from dinner or something. It tasted great when I heated it with a little soymilk this morning. Another keeper from Dreena!

For lunch today I packed a tofurky wrap with 3 slices Italian Deli tofurky, the rest of my leftover guacamole from last night (a couple tbsp) and spinach—all wrapped up in a whole wheat wrap. I also packed slices of my pear from the farmer’s market yesterday and a Z-bar for a snack. I used to eat these bars ALL THE TIME in college. I ate them so much I became burned out on them…but it’s been a year so I am starting to bring them back. I’ve never tried the peanut butter kind…I always ate the chocolate brownie or the chocolate chip. I like the texture and taste and the list of ingredients is simple and wholesome.

    It sounds like today is going to be much better! I hope your hands feel better. I had a reaction like that last year on my stomach after going to a tanning bed. It was *perfect timing* as I was leaving for FL the next day.

    I picked up a box of those ZBars yesterday. I like the peanut butter flavor, but wasn’t a big fan of whatever type I tried before that.

    I’m a family doc and just wanted to give you a tip I tend to give my patients when they have lingering reactions to things on their skin. I would take some ibprofen to get down the inflammation and possibly try a topical cream (something for bug bites or poison ivy), of course ice is always a good choice.

    Love the Z Bars! I think chocolate chip is the best but they are all good.

    quick question: i want to try a banana blueberry muffin recipe but it calls for 1 1/2 tsp. egg replacer. I tried finding it in whole foods yesterday but had no luck. I’ve never used it – normally I just add unsweetened applesauce in place of eggs. Anyone know where the heck I can find it or (preferably) if I can replace it with something else? Thanks all!

    Oh and I got all happy when I saw Z-bars on here lol…I have one almost everyday. Brought in the chocolate brownie one for a snack today. My favorite 🙂

    What is a good substitute for eggs?

    Ener-G Egg Replacer – follow directions on box.
    2 tbsp corn starch = 1 egg
    2 tbsp arrowroot flour = 1 egg
    2 tbsp potato starch = 1 egg
    1 heaping tbsp soy powder + 2 tbsp water = 1 egg
    1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
    1 banana = 1 egg in cakes.
    1 tablespoon of finely ground flaxseeds whipped with 1/4 cup of water. The flaxseeds gel and bind with the other ingredients.

    Thanks so much for that info. Very helpful 🙂 I’ve never seen Energ-y egg replacer but will try to find it. I think this time around I’ll just use an extra banana since they’re supposed to be vegan banana blueberry muffins. Thanks again.

    How are the peanut butter zbars in comparison? I love the chocolate brownie, enjoyed the chocolate chip, adore the honey graham, but am a little afraid of the peanut butter – is it super sweet?
