Breakfast

An Early Start!

Good morning!

I hope everyone is enjoying their Sunday thus far :).

This morning Ryan and I headed over to my church’s 8 am “celebration” service. I was so excited for him to finally come with me because usually I go alone every Sunday! Everyone was like, “you brought someone this week!” and it was great. The service I go to is a contemporary Baptist service and I think Ryan really enjoyed it. Actually, he told me it was the best service he’s ever been to so I guess it was worth me dragging him out of bed this morning at 7 am (which he was NOT happy about). Haha 🙂 Before we headed out this morning, I snacked on a Luna Tea Cake to tide me over since we were going out to breakfast after church:

I was quite hungry by the time church ended and we headed over to one of my favorite breakfast places here, TomKats—its a little diner known to locals as the best breakfast in Vero. I started my breakfast with a HUGE mug of coffee with one sugar packet (my second cup—I had a cup before church! eek!):

And, for my meal, I ordered the vegetable fritatta made with egg whites with whole wheat toast and fresh fruit on the side.

They forgot I said no hashbrowns…oh well! The fritatta was great—chock full of spinach, bell peppers, onion, sundried tomatoes and smoked mozzarella cheese. I ate the entire thing as well as my fruit and half a slice of toast (Ryan ate the other half). I didn’t eat the hashbrowns since I didn’t want them anyway.

And I just HAD to try a bite of Ryan’s waffle!

I think I should have eaten MORE though since I’m already hungry again!!!!! Obviously my meal did not fill me up the way I thought it would. Hate that!

I forgot to tell you guys last night that Ryan was nice enough to bring me over some unsweetened coconut from Tampa so I could finally make the amazing raw vegan macaroons that Gina swears by. When I met her a few months ago she brought some with her for me to try and I haven’t stopped thinking about them since….they were SO amazingly good! Since I don’t have a dehydrator, I let these sit in the oven for about 15 hours and dry out. They turned out PERFECT! Even though they are quite costly to make (coconut oil….pure maple syrup…..ground almonds……), they are totally worth it and I had one after breakfast this morning:

I’m still sort of hungry but Ryan and I are going to go to the gym now since I have a guest pass for him and then we are going out to a late lunch before he has to leave and drive back to Tampa. What a fun weekend!

    Fabulous church service, breakfast (I love the name of the restaurant, haha – reminiscent of a certain Hollywood “It” couple 😉 ), and version of Gina’s INSANELY DELICIOUS macaroons (holy yum)!!

    oh wow those macaroons look great! I love macaroons.

    Just curious Jenna- do you ever have trouble motivating Ryan to go to the gym with you? I find it hard to motivate Eric to go (he doesn’t really like gyms in general!)

    those macaroons look amazing!! i love raw food so i will definitely try these. i don’t have a dehydrator so i’d prob just freeze them.

    Sounds like a wonderful day you’re having! I’ve been seeing fritattas around the blog-world and it really makes me want one! I know what you mean about going to church alone. Last year one of my friends and I would sit together, but he’s teaching SS this year and goes to a different service now. Just recently I was sitting in the service thinking how I missed having someone to sit with! Enjoy your time with Ryan…and the short week!
