This morning for breakfast I had a huge bowl of oatmeal made with 1/2 cup skim, 1/2 cup water, vanilla extract, a dash of salt, tons of cinnamon and 10 grams each of walnuts and the new freshly ground peanut butter i got yesterday from whole foods. I sliced up and mixed in a medium sized banana as well. It was great—this breakfast really keeps me going all morning at school, all for about 425 calories. I make the oatmeal the night before and put it in the fridge, then in the morning I just slice some banana into it, toss some nuts on top and heat it quickly in the microwave for 45 seconds. Delish!

Yes, 1/2 cup oats = 1 cup cooked oats…that’s the amount I always cook. I used to just use Quaker old fashioned, but found that “Scottish Style” oats provide much more bang for your buck with a great chewy texture and more volume in the bowl! These oats I buy from whole foods and are in a cannister in the cereal section. so good!
