Coming Undone

Another hearty Israeli couscous salad, coming your way!

This time, featuring cannellini beans and an over easy egg. I love eggs!

Israeli Couscous Salad with Beans and Egg

serves 1

1/3 cup Israeli couscous
2/3 cup water
1 tbsp chopped sundried tomatoes, drained
1/2 cup drained and rinsed cannellini beans
1/4 tsp paprika
1/4 tsp sea salt
1/4 tsp ground black pepper
1 tbsp Athenos Feta cheese
Cook the Israeli couscous according to package directions in simmering water. Once the couscous has absorbed all the liquid, add
the beans, sundried tomato, paprika, sea salt and pepper. Turn off the heat and put on a plate.
Cook an egg over easy in a small skillet. When the white has set but the yolk is still pretty runny, gently scoop it up and place it on top of the couscous.
Sprinkle feta overtop along with another pinch of salt and pepper.

I did a leg workout at the gym and then ate painfully early because I have to go get a cavity filled in an hour. That’s right—yesterday it was my eyes, today it’s my teeth. I figured it must be from all the candy I eat or something. Speaking of sweets, I’m hoping to get back from that and from my writer’s group with enough time to bake this little diddy this afternoon.  I made them once before and they were pretty darn unbelievable. The boy is having a really stressful week at work so I thought I would surprise him. Except for the fact that he’s probably reading this right now and therefore it won’t be a surprise anymore. Oh well, they’ll still be good…even if I can’t chew ’em because my mouth will still be numb from the novacaine shot.

    I live at the dentist and the eye dr. The dentists says I have ‘soft teeth.’ He doesn’t see how much chocolate I eat.

    Love cannellini beans and I just had a hard boiled egg, sliced on a sandwich thin….so good~ Love eggs also. Your lunch was loaded with protein, like that idea for next time.

    I usually up the oats and use a mix of whole wheat flour. Even the husband who is quite skeptical of healthy deserts loves them.

    I’ve never had Israeli couscous–just the smaller grain kind, and I pretty much love those!

    I probably could post the husband’s deepest darkest secrets on my blog and he would never know. I’ve had my blog since November and he still hasn’t read it!

    I also have never tried Israeli couscous! It looks more like quinoa! I do love couscous though! Maybe I will give it a try!

    Isn’t eating an early dinner the worst?? When I waitress, I have to be at work at 430, which means I have to eat dinner before that! It just throws everything wayyy off!
