Happy Bunny Day!

Happy Easter!

I just woke up and am sort of a rush to get all my stuff together and drive home to Tampa. Of course, I couldn’t start the day thought without a hearty breakfast so I made a big bowl of multigrain cereal with 1/2 cup hemp milk, 1/2 cup water, a banana, some pb, a tbsp of flax and maple syrup. That’ll get my day started right! I’m having a big lunch with my family today…my mom is so excited because she said she has “vegan food” for me—this should be interesting!!! I’m also excited to try the coconut cake because it just looks so tantalizing sitting on the counter! I hope everyone likes it!

I’ve been having a case of late-night munchies lately!! I mean, I guess it makes sense since I always have to eat an early dinner at 5 but don’t go to bed til after midnight. Last night I had half a clif bar at work and was totally fine but then when I got home at 11:30 I was starving so I made a piece of toast with raspberry preserves. I guess I could have picked a worse snack! 🙂

Have a safe and merry Easter today. My family is big on hiding Easter baskets so I can’t wait to go home and find mine!!!

    I love Easter baskets as well, this morning mine had a copy of Eat, Drink and Be Vegan waiting for me (along with lots of dark chocolate, of course!) So I’m very excited to try a bunch of those delicious looking recipes you’ve been making =)

    We hide our kids’ baskets, too. We didn’t do that when I was little. It’s so fun to watch them search and search and get so excited when they find it!

    Happy Easter Jenna!

    Don’t worry about the munchies at night. I have been snacking as well and they range from healthy ones like fruit/nuts and tea to cake. That happens when either my mum or I bake and there are always tempting treats around the house. Today she baked cupcakes so I practically eat sweets everyday.

    happy easter jenna! i don’t post here often, but i love your blog!!! just wanted to let you know i was inspired by your walnut crusted french toast yesterday and i made my own version today! Its was not vegan and i added some ground flax with the walnuts- but it was so phenomenally delicious!!!! i am not sure i will ever be able to make french toast again…. thank you for the constant inspiration!!!

    (i was vegetarian for 12 yrs, and vegan for 4 of those years and now i eat everything again, but you really inspire me to want to go back to my old eating/living habits- thank you!)

    Happy easter Jenna!

    my mom just puts the easter baskets on the fireplace (7 kids in my fam!) but guess what- last night she put them on the fireplace as usual and in the middle of the night my dad hears crunching….well my dog got into the baskets and was munching on chocolate and jelly beans! oops, my parents were so mad haha, good thing shes a large golden retriever or shed be sick from the chocolate!

    Unfortunately there’s no real solution..for mine at least. Sometimes an herb called feverfew works, sometimes excedrin migraine and sometimes prescriptions, which I have a ton of. Try taking 2 execedrin and laying down with ice on your head!

    My parents just got back from Florida and didn’t have time to make Easter baskets for us. Sad. Have a great time home and Happy Easter!

    ha, thats what you consider late night munchies?
    i haven’t gotten a basket in ages, but my parents used to fill mine with fruit instead of candy.

    hey jenna,
    just wondering how your catering job went? did your client like your work? I was also wondering what part of the grocery store did you find your wonton wrappers in? i have been searching for them in the freezer section and can not find them?!

    I’ll see my client tomorrow at work so I’ll know then how it went! I’m hoping well!! I found my wonton wrappers in the produce dept. of my local grocery store (publix) actually. They were MUCH easier to work with than I thought and I would def. do this again for a party or family gathering in the future!
