It’s been a pretty hectic day over here and to be honest, I really didn’t even feel like cooking tonight but I knew I needed a good, filling meal because I have to close tonight at work and won’t get home probably til 11:30. I defrosted a block of tofu a few days ago and had yet to use it, so tonight I made the Cornmeal-Lime Crusted Tofu out of Veganomicon again. I made this before and LOVED it…but last time I fried it and since I fried my tempeh sticks last night and basically ate my weight in frosting today, I decided to be healthy and bake the little guy instead. I dipped in leftover balsamic-maple sauce from last night, of course! I also stir fried some kale in a little toasted sesame oil, red pepper flakes and garlic and had a plain sweet potato for sides.
My cake turned out FABULOUS!!!! And, oh my god, that frosting is amazing. Like, seriously amazing. Like, my roommate and I couldn’t get our little hands out of it! I didn’t even eat a snack today because I feel full just licking the spoon so many times. I can’t wait to present this gorgeous cake to my family tomorrow!
And….I’m off to work. I’m bringing half a clif bar to eat later on and hoping I won’t get out too late because this day has just exhausted me. I hope that if you all are traveling this afternoon/tonight you are safe and enjoy a wonderful Saturday night!
