Behind The Butter

Happy Father’s Day!

Happy Father’s Day to all the dads out there!

Today is one of those days where I wish I didn’t live 2,000 miles away. I have the best dad in the world….isn’t he a looker?

If you’re looking for dad-friendly recipes today, here’s a short list:

Spinach Feta Turkey Burgers (try ’em on the grill!)

Sweet & Spicy Glazed Salmon Sandwiches

Hot and Spicy Jambalaya

Arroz con Pollo (a little ambitious but if you get started now, it will be ready for dinner! and it’s sooooo good)

Chicken and Green Chile Enchiladas

Greek Yogurt Cheesecake

Chocolate Walnut Torte

Gingered Peach and Blackberry Cobbler

Fresh Strawberry Cupcakes with Strawberry Buttercream

Old Fashioned Banana Pudding (the kind with the meringue and ‘nilla wafers!)

Love you, dad! Thanks for helping me across the monkey bars, taking me on countless father-daughter date nights and showing me an example of what a good man is all about so I would never settle for less. Oh! And that cowlick…thanks for that. Not.
