Mexican on Memorial Day

Well, my weekend is coming to a close as I am now back in Orlando cleaning, doing wash and getting ready for the week ahead. Today Ryan and I didn’t do anything crazy for Memorial Day—we went out to lunch and visited with his grandmother for awhile and then I packed up and left. For lunch we went somewhere totally awesome though—a TOTAL hole in the wall! The name of it is “The Taco Bus” and it literally is an old run down bus that was made into a mexican restaurant. You go up to the bus window and order and then sit under umbrellas on picnic benches and enjoy truly authentic south of the border tastes. I was shocked and pleased to find that the special of the day was TOFU! How cool is that?! I had a tofu burrito and it was so delicious—thick marinated slices of grilled tofu combined with a very fresh mix of chopped tomatoes, cabbage, chilies and cilantro, all wrapped up in a huge soft flour tortilla. It was so good and very cheap. I think this might become a regular place for Ryan and I in the future, as he thoroughly enjoyed his beef and chicken tacos with beans and rice.

My burrito was very messy and basically fell apart so I ate it with a fork. I ate all of the tortilla and most of the tofu. It was huge!

I had a snack of a toasted flax waffle with almond butter later in the day before my drive because I knew I was going to have a later dinner at home. It did the job of holding me over between cities and when I got home I did a quick grocery shop and picked up dinner from my favorite Lebanese place next to Publix. I couldn’t think of what I really wanted for dinner and a fresh salad and falafel (thanks VeggieGirl!) were calling my name. It was a very good choice :). I ate all but one of the falafels and all of the delicious salad. I’m craving something sweet now though……

I have Veganomicon’s Cheater Baked Beans in the oven right now to have all week to eat. This was SO delicious last time I made it and my only complaint was that I didn’t make enough! So, this time I made the entire recipe and it should last me a good couple lunches and dinners.

    OMG Jenna! I worked right by the Taco Bus on Hillsborough for a summer and I ate there all the time! It’s so fun, I miss it! I was so reluctant to get out of the car to eat there the 1st time, but I’m so glad I did!

    p.s. I will be in Tampa the weekend of 13-15 of June, maybe we can have another 3 course dinner club get together?

    Thats SO funny!!!!!!! I’ve been telling Ryan about the Taco Bus now for 2 years and we finally just got there today………he loved it of course! And it fits our budget! haha! We def. need another dinner soon. I’ll have to email kate and see what’s going on….I’ll let you know!

    yum! the burrito looks great! have you ever made tofu sloppy joes? I’m trying them tomorrow bc my bf and I have recently grown to love tofu and we want to experiment. I need a recipie for homemade sloppy joe sauce !!

    Taco bus? haha YUMS. The tofu burrito looks SO good, I’m loving the loads of fresh tomato and onion in there.

    I’m also seriously feeling like I’m missing out on something big by never having tried falafel… I don’t even really know what it is! But I sure want to find out because I keep hearing about it, and it looks darn good.

    That burrito looks AMAZING! Where at in Orlando is this place?!
    (I live in Polk County, by the way, just off of I-4, so I’m always in Orlando, and sometimes go to Tampa.)
    Next time you’re in Tampa, though, you should visit Grassroot Organic Vegetarian/Vegan/Raw restaurant. It is sooo good!!
    Have you been to Dandelion Communitea Cafe in Orlando?? It rocks!

    TacoBus is in Tampa on Hillsborough Ave, it was pretty good, and fun.
