Dinner

Off to Work!

ย Well, as I have done in the past when I have to be at work at 5:30, I ate a very early dinner tonight at 4:30!!! I will def. need a snack later!!! ๐Ÿ™‚ I remembered to take my Chunky Lentil Stew (made a couple weeks ago) out of the freezer yesterday morning to thaw out in the fridge, and just in time because it tasted so wonderful tonight! There’s nothing like homemade soup…seriously! Because I always try to eat a big meal before work that will last me about five hours (I always try to last 5 hours but always end up snacking after about 3 hours….hehe), I had a big bowl of that along with the other half of my French baguette from lunch that I toasted in the oven and slathered with two tablespoons of the hummus from the Lebanese restaurant around the corner. Yum! I also had a homemade cappuccino around 2:00 for a little pick-me-up. It’s going to be a long one…

Well, here I go! Hopefully tonight won’t be too crazy at work and they will let me leave at a reasonable hour. Ryan should be here around 10:00 and that’s about the time I’m hoping to leave.

Please be safe tonight! There are so many crazies on the road tonight that have been drinking way too much…drive carefully and know your limits! ๐Ÿ™‚

This dinner was about 524 calories….hopefully it will last me awhile! I’m bringing one of my nut bars (KIND fruit & nut) with me though that I probably will eat around 8 or 9 as a little snack. I need my fuel tonight!

    Have a happy new year Jenna! I’m thinking it’s going to be a good one… I just bought a food scale, I have a standing order from a local, organic Syracuse farm to get fresh produce twice a month, I have a bunch of new recipes to try when I get back (compliments of you, the chef (almost) hehe), I’ve got an unlimited membership to a local yoga studio and every intention to go as much as possibly and a new outlook on nutrition, exercise and ultimately my well-being (once again, thanks, in part, to you). I really do appreciate the blog for your daily inspiration ๐Ÿ™‚ and hope you get to enjoy ringing in 2008 with a proper celebration asap!

    It means so much to me that you find my blog so inspiring, danielle! It’s because of readers like you that I keep on writing, taking pictures, and testing new recipes every day!!! I love to hear the positive feedback and it sounds like you are doing GREAT! Food scales are a must for any nutritionally-aware kitchen nowadays. I couldn’t live without mine. Def. a good investment! and can I please come to the organic farm??? We have NOTHING like that here…not even a farmer’s market…its so depressing!
