Sleepy Saturday and Morning Oats

WOW- I slept in to 8:15!!!!! (yes, I know that it’s a saturday and normal people sleep in on saturdays but I NEVER sleep in!) It felt great!

Last night Ryan and I debated on options on what to do….there was always going to a bar (not a big fan, plus it was freezing), watching a movie on the couch (did that the night before) or go out to a movie. We decided to go to a movie! We went to a late (10:00) showing of Atonement, which I had been DYING to see! But the really great part was the theater we went to…it’s one of Tampa’s historical landmarks and only plays 1 movie a night..it’s a little old fashioned theater that sells hot chocolate, tea, imported chocolate bars and beer and wine! I got a cup of decaf herbal tea and was set!  Everyone sits in balcony seats and there is actually an orchestra that comes out to play from under the floor before the movie starts (replacing typical previews). The best part is that it’s not any more expensive than just going to AMC but the experience is SO much better!!!!! Atonement was great too..I love Kiera Knightly and have a weakness for sweeping war epics. Favorite movies include the English Patient, Gone with the Wind, Legends of the Falls–I’m a sap!  I really enjoyed this one though. I felt bad because it wasn’t really Ryan’s style, but he was so nice to take me because I told him it wasn’t his kind of movie to begin with. What a guy :).

This morning I made some oats with 1/2 cup milk, 1/2 cup water, 1 tbsp ground walnuts and 1 banana. They turned out creamy and delicious. I usually eat Steel Cut oats at my house but keep some basic Quick Oats here at Ryan’s to make. It’s nice to change it up!  My total breakfast calories were about 400.

At 10:30 I’m going to a power yoga class. Last night Ryan asked if he could come with me so this might be interesting! I took him to a yoga class with me when I lived in South Carolina and he was so impressed because the next day he was too sore to move! And he’s a fit guy–always at the gym swimming and working out. Yoga just uses completely different muscles than what we usually use if we just work out at the gym, I guess. After yoga I’m sure we will pick up lunch….every weekend we do this: we drive together and Ryan stops at Quiznos and picks up a sub and then drives me to my favorite little cafe and picks me up a sandwich or soup or something. We are opposites in what we like for lunch but at least we get to bring it home and eat it together! It’s funny!

miraval omelette SELF | April 2003

Sunday breakfast. From Miraval Resort & Spa in Catalina, Arizona. Egg-white omelettes don’t have to taste like quilt batting. Chefs at Miraval whip up a fluffy, veggie-heavy number. Their secret? A dollop of lowfat cream cheese, which improves the texture and adds a rich taste.
    Makes 1 serving.

    Olive- or vegetable-oil cooking spray
1/4 cup diced fresh shiitake mushrooms
1 tbsp finely chopped green onion

    1/4 cup diced tomato
1/4 cup packed, chopped fresh spinach
    3 egg whites, lightly whisked
    1 tbsp lowfat cream cheese
    1/8 teaspoon sea salt
1/8 teaspoon freshly ground black pepper

Coat a nonstick sauté pan with cooking spray and place over medium heat. Cook mushrooms and onion about 5 minutes; add tomato and spinach and cook an additional 3 minutes. Mix in egg whites, cream cheese, salt, and pepper. Cook until bottom and sides are firm, about 4 minutes. Flip omelette in half to serve.

Bev, that’s so funny you wrote that because I have actually been to Miravel and LOVE it! And, I make that omelet sometimes too because I have the cookbook from there!!! 🙂 Miravel is the place that inspired me to pursue a career in healthy eating…it’s truly magical place. And that omelet is amazing!

The name of the theater is just simply the “tampa theater”…it’s so neat and old and historic! Love it!

    Jenna-
I love reading your blog. It’s nice to know there are other “foodies” out there who love cooking and eating as much as I do. Sometimes my friends think I’m crazy. Anyway, we have a strange amount in common. I’m also a college student (at Washington University in St. Louis), I love to run and just completed my first half marathon in september, I also have a boyfriend who “tolerates” my healthy eating, I only eat 70% or more dark chocolate, and I can’t have a grilled cheese without a little ketchup for dipping. Thought the similarities were kind of funny. Anyway, I’ve been reading the blog for several weeks now, and couldn’t resist putting up a post. I don’t really do the whole blog thing, but I had to make an exception. Thanks again.
ps. what made you decide to start into culinary school?

    Hi Sara!

That’s so funny!! 🙂 I actually looked at washington university for grad school when I was thinking about going that route. Anyways, I chose culinary because even though i have a degree in english, my passion always has been cooking and nutrition. After I graduated I studied writing in Paris for 6 weeks and then when I got home I just sort of sat on my butt for a month trying to get a corporate job and when that didn’t work out so well, decided to take the plunge and go back to school!! I took out the loans, signed the papers and it just so happened that my best friend was moving to orlando at the same time so we got an apartment together and the rest is history. I love school and I’m learning SO MUCH!!! Everyday I learn so much more than I ever thought possible but it’s also very difficult because i am the minority there because i don’t want to be a restaurant chef—I just want to be a writer and have my own cookbooks! 🙂 Still…I think its very necessary for me to know everything possible about the subject I want to write about and I am doing just that….In september I’m going off on my externship somewhere in the country where I actually work in the field for 3 months and then I graduate at the beginning of December!

I never thought I would do the whole blog thing either but its so fun and I love “meeting” all these new people who share interests with me! I, too, never thought there was anyone else out there who loved food and cooking as much as I do and now I can see that I was wrong! 🙂
