Double Meh

I knew it would happen one of these days.

I just knew it. I am very very VERY sorry to report that I forgot my camera cord at my parent’s house in Tampa today. I feel like a total loser and there’s really nothing I can do about it! I begged my mom to overnight it to me but she is going out of town on Wednesday and has to work all day tomorrow so she said she didn’t know if she could. So…..I guess the only thing I can do is just give really accurate descriptions of my food this week and still take pictures, but just upload them on Sunday when I go home for Easter. I am SO SORRY!!!!! I just didn’t have my head on straight today….mondays are always my “blah” days it seems because I have to leave the family and boyfriend and forge on alone for the week and today was no exception. Also, since Ryan was out of town on business for most of the weekend we didn’t get to spend as much time together as we usually do. Less than 24 hours and of course, it goes way too fast. Sigh.

Anyways, here’s my “descriptive” food report for the evening. I was craving something comforting for dinner tonight so I whipped up some Chickpea Cutlets, roasted brussels sprouts, mashed cauliflower and a new kind of quinoa I found in the bulk bins at the store–red! How cool! The chickpea cutlets probably took 20 minutes to make and they are just so satisfying. This has gotta be one of my favorite meals.

This afternoon I wanted something cold and creamy after driving for an hour so I made a nice fruit smoothie using some frozen sliced peaches, strawberries, about a cup of almond milk and 1 tbsp of ground flax. I love peach anything..it is one of my favorite fruits and nothing, NOTHING, beats a homemade peach cobbler.

I’m off to school now—we have a quiz tonight then I’m not exactly sure what we are making. I do know that this week we are doing spanakopita, baklava and strudels…but I don’t know in which order. Guess we will have to wait and see!

I have the most amazing boyfriend ever!!! Ryan went over to my parent’s house tonight and picked up my camera cord to mail to me tomorrow so hopefully I will have it on Thursday!! I’m a lucky girl 🙂

    darn, no big deal! (I can picture the delicious-ness of the patties even without a picture!) Good luck with the quizzes..I too am IN LOVE with peaches; can’t get enough!!

    Do you have a memory card that you save pics to? if so, your computer may have a little slot you can stick the card in – no cord required.

    Chickpea cutlets sound like a great meal. I love them so much, because they’re so easy to make when you crave ’em!

    Hey Everyone,
    So I just picked up some Oat Bran, and instead of having hot oats in the morning, I wanted to do the whole overnight -soak the bowl of oats- thing…Anyone know how to do this?
    I was thnking 1/4 C Oats (dry) 1/4 C Milk, 1/4 C Water and let it sit overnight. Then in the morning stir in 1/2 C Fage with some berries?
    Does anyone know if this will work?

    hey Jenna, you can also check to see if your printer has a slot for a memory card. I lost my camera cord aaages ago, but I am still able to DL pix thru the SD card slot on my printer (which is the cheap-o HP OfficeJet my school gave me 2 yrs ago). Otherwise, no worries.

    Annie, I think the swiss oatmeal technique works best with rolled oats. Oat bran is really very quick cooking, I usually just add boiling water and cover for a bit.

    and ooh– all you peach lovers– have you tried Trader Joe’s DRIED WHITE PEACHES?! omg SO GOOD!!!! I don’t have a TJ nearby at school (closest one is in Charlotte!) so I have to get my mom to mail them down to me but it’s worth the postage. You can really tell they’re made with white peaches (altho yellow are delicious, white are just… spectacular) and if you nuke them for a few seconds, they get puffy again, so cool! haha. anyway, try them if you can!! They’re a great pre-workout snack if you can’t stomach toast or yogurt or whatever.

    mmmmmm baklava is my favorite!! my grandma (who’s armenian) makes the best 🙂 so sweet and nutty! don’t worry about the pictures… your descriptions are great!

    Mhhh, peach cobbler… I’ve had it only once but loved it. I have to make it again, thanks for putting the idea back into my head 😉

    I still haven’t had chickpeas yet, but I’d have them wish mashed cauliflower, too for sure =p
