Last Breakfast of 07

Happy last day of 2007 everyone!!

It’s so crazy that this year is now over…it went by so fast! For breakfast this morning I made peanut butter steel cut oats (made the oats last night and tossed them in the fridge) with banana, a drop of pure maple syrup, and mint-green tea on the side to help my sore throat. I’m leaving pretty soon to go to an ashtanga yoga class with the nice new mat my parents got me for christmas, so that’s exciting!

I hope everyone has a wonderful day!

Alas, the egg poaching experiment was disasterous. Well, not without an extremely tasty result, but let’s just say I’m glad I’m not documenting all of My meals with a camera(you are a brave soul)! I’m probably going to pick up a little egg poacher at some point because, you’re right, nearly nothing is more comforting. Anyway, I’m commenting on This post in particular because I’m excited to start off my new year with your signature oat recipe! I’ve always been a fan of steel cut oats but had never even thought about adding a banana (although I have experimented with some other combos). Can’t wait to see how it turns out creamy and delish. Have an amazing amazing New Years’ Eve and I’m sure that this coming year will bring nothing but great things for you- I mean, look at how proactive you’re being in really grabbing what you want in life- Super inspiring!

Soooo, the oatmeal=Amazing! I knew that I would like it (being an oatmeal lover in general) but I didn’t realize how much I would Love it. You’re absolutely right, the banana sort of melts in there and along with the splash of milk makes the oatmeal all sorts of frothy and creamy. Awesome!

Thanks for the perfect way to start off the new year (and probably many days to come!!). Your recipes keep getting better and better (can’t wait to try those pancakes)- keep ’em coming!
